1 kg garden peas
1/2 bunch chopped fresh mint
1 litre cold water
1 vegetable stock cube
4 tbsp fresh cream
1. Place the peas, stock cube and water into a saucepan, bring to the boil and simmer until the peas are very tender. Allow the mixture to cool, add the mint and purée in a food processor or with a hand blender, chill in the fridge until ready to serve.
2. To serve it, season with salt and pepper to taste, transfer to bowls and swirl in the fresh cream.
